Why did Amalek

Summary: An analysis by the Chasam Sofer. My own suggestion, plus an analysis of a bit of girsology.

PostRashi relates a nice diyuk in parashat Ki Teitzei, towards the very end (Devarim 25:18)

17. You shall remember what Amalek did to you on the way, when you went out of Egypt,
18. how he happened upon you on the way and cut off all the stragglers at your rear, when you were faint and weary, and he did not fear God.

and

That is, אֲשֶׁר קָרְךָ means לשון קור וחום, that Amalek chilled the bath by attacking first, before any other nation. And then, וַיְזַנֵּב בְּךָ, that 'this is a smiting of the 'tail' -- they cut off the circumcisions and threw them upwards" towards heaven.

The Chasam Sofer cites both these Rashis. He cites the second Rashi as ending (after the quote above of וזורק כלפי מעלה) with the words ואמר טול מה שבחרת, "and said, "take that which You have chosen" '. then writes:

This is faithful to Rashi's source, Midrash Tanchuma, which states:

(And a bit later, in siman 10, in Midrash Tanchuma as well.) But Judaica Press did not have this in Rashi. Nor did this Mikraos Gedolos. Nor in Mechokekei Yehuda. Nor does Berliner have it. Nor does this Ktav Yad of Rashi (Munich, 1233) have it.

That Ktav Yad (pictured to the right) also mentions that in Atz Kotzetz, a piyut by R' Elazar HaKallir, mention is made to this act by Amalek:
'And this is what the Kallir, of holy mouth, established:

A Ktav Yad from Rome, 1470, is also missing it. Though they change למעלה to לשמים. This one (of undetermined date, called) does have it.

Yosef Daas says kein tzarich lomar about this insertion.

At any rate, even if it is not physically present in the Rashi, it reflects the underlying message, since it was indeed present in midrash Tanchuma.

The Chasam Sofer continues that such an action and statement, it seems to him, are necessary. "For if not so, this would not have chilled the bathtub, for the nations of the world would have said that the descendants of Amalek are different, for even though the Amalekites perform all the toevot, they still have the merit of milah, which was that their fathers' fathers were circumcised from the seed of Yitzchak, and this stood for them, as is stated regarding Og, 'Do not fear him (אותו)', it is written in the Zohar that Moshe Rabbenu feared from אות"ו, that is to say, the אות ברית of his, in that he was circumcised amidst the house of Avraham. And here as well, there was to attribute this to the merit of the circumcision. And Amalek, his entire intent was to chill the bathtub. Perforce, " they denigrated the milah in this manner, so that the nations would see that the merit of circumcision did not stand for them, and yet, they managed to do this.

Another approach might be to simply cast this as part of their dismissal of Hashem, in their attack of the Jews. The following explanation of their intent might help, though I am unsure of its specific import. From later in Tanchuma:
